Recipe - Baked Herb & Butter Oysters

Think indulgent garlic butter panko gratin on succulent oysters. Get ready for everyone to come back for seconds with this crowd pleaser!

- 8 Dibba Bay oysters
- 100g softened unsalted butter
- 1/4 cup chopped dill
- 1/4 cup chopped parsley
- 1/4 cup chopped coriander
- 1 tsp dried oregano or thyme
- Zest of 1 lemon
- Few drops of chili oil
- 1-2 garlic cloves, crushed
- 1/4 cup panko (or breadcrumbs) + extra to sprinkle
- Salt to season


1. Combine the butter, herbs, garlic, chili oil, lemon zest, and panko in a bowl. Add salt to taste.
2. Shuck and drain the oysters.
3. Top the oysters generously with the butter mixture. Sprinkle with extra panko and bake in a preheated oven for about 10 minutes or until sizzling golden.
Pro tip: You can make the mixture in advance & reserve at room temperature until ready to use!
